One record even shows a geoduck that lived to be 168 years old. A geoduck can live for a long period of time. While the geoduck is a slow-growing species, it makes a lot of sense considering their lifespan. The geoduck is a unique-looking species, but its color palette is neutral. Their shells have darker colored rings and have specks of brown covering along the edges of the shell. Geoducks take water in and squirt water out through either of these openings. Their most notable feature is their long siphon which includes the two separate openings at the end (the neck). They can be more light-colored, almost a creamy white, and dark-colored to a very deep dark brown color. Geoducks do eventually stop growing when they reach around fifteen years of age, and the majority of their growth takes place in the initial years they are alive. A geoduck’s shell is between six to eight inches long, while the rest of its incredible length comes from its siphon and neck. It takes geoducks around fifteen years to grow as large as seven pounds. While the average size is just under two pounds, they can become as large as seven pounds. The other disposes of the unnecessary water it has taken in. One is for taking in necessary life sources, like water, for example. They also have a neck that splits open into two different parts. This is what grows to reach multiple feet in length. The longest part of their body is the siphon. Part of the name originates from a word meaning “genitals.” Its name is probably due to the clam’s genitalia-like appearance. While they do have a shell-like most other clams, their body is extremely large. As part of a Hangtown fry, it's a great late supper - especially with bourbon or brandy and soda.Geoduck isn’t your standard-looking clam. As a fried clam, it's quite good, makes an excellent clam po-boy. When doing a geoduck ceviche, it's incredibly good with papaya and a garnish of avocado at service. If "on ice" was the only way to go, I'd give it a whirl. That's easy for me to say because I've got the luxury. ![]() That is, I would not buy on ice but only from a tank. I wouldn't buy it myself, unless I was sure it was alive at the time. As sushi, the flavor is quite delicate and I'd classify it as more a texture than a taste. Geoduck is way up my list of favorite sashimi, but only in a trusted bar. ![]() ![]() As sushi or sashimi the traditonal garnish is a bit of soy sauce only. I especially like fried geoduck as an oyster substitute in a Hangtown fry (not that there's anything wrong with oysters!). My favorite ways to eat geoduck are raw, as sashimi, nigiri sushi semi-raw, as ceviche or fried. If the animal tastes or smells at all like iodine - pass. By comparison, farmed Alaskan Coho salmon was $3/lb for a whole fish.īitterness in shellfish is not a matter of how to "fix," "compliment," or "disguise." It's indicative that the animal is not fresh and should not be eaten. At a large Vietnamese seafood market in Rosemead, price for live geoduck, alive and in the tank, customer chooses and "catches" his or her own (with a pair of tongs), was around $6/lb, as of last week. The Japanese name is "mirugai," btw it's very common in sushi bars, and because it's so common I don't think it's fair to call it a delicacy at all - at least not on the west coast. The taste should be mild, slightly briny and sweet. Raw conch and abalone have a bit of a crispness to them as you bite. ![]()
